Carolyn “The Healthy Voyager” Scott-Hamilton Turns Three Ingredients into a Tasty Dessert

I love a good challenge. So when the gals at HBD gave me three ingredients and said make us a damn good recipe. I said, Bring it on, bitches. The players? Avocado, mint and strawberry. The result? A delicious dessert that persuaded me to skip dinner altogether. 

I have made raw vegan chocolate pudding in the past with avocados so I immediately thought of mint chocolate pudding. And what's better in chocolate pudding then chunks of strawberries?! Umm, nothing. This recipe is also gluten free with a low glycemic index, and can be made raw (sub raw cocoa powder and raw agave). A decadent summertime dessert suitable for all special diets!


Hat Trick: Chocolate Mint Mousse

Serves: 2

What to Buy:
1 pitted and peeled avocado
3 tablespoons cocoa powder
1/3 cup agave nectar
1/2 teaspoon sea salt
2 teaspoons vanilla extract
1/2 teaspoon mint extract flavoring
1/2 cup water (add small amounts incrementally if more is necessary to blend)
Fresh strawberries, washed and sliced
5 to 6 fresh mint leaves

How to Make It:
In a blender, mix all of the ingredients until creamy, no chunks. Scoop into serving bowls and garnish with fresh strawberry slices and mint leaves. Enjoy!

P.S. You can also freeze the mousse for later for a deliciously divine frozen delight

That's sounds so good :)

What's the difference between this chocolate mousse and the pudding? Do the strawberries give it that lighter, fluffier quality?

I just made this and it's delicious! It's rich and creamy, decadent.. it is a little sweet for me so next time I make it I will cut back on the agave. I may try this with brown rice syrup next time. Yum!
