A healthy homemade bean dip and spread
Makes:
What You Need
1 clove garlic
1 (15-ounce) can black beans, drained and rinsed
1 tablespoon lime juice
1/8 teaspoon salt
1/4 cup olive oil
1/2 cup fresh cilantro, chopped
How to Make It
Place the garlic in a food processor or blender and process until minced. Add the beans, lime juice and salt, and process into a purée. With the machine running, slowly add the olive oil in a steady stream through the feed tube. Process until mixture thickens, about 1 to 2 minutes. Stir in the cilantro, and spoon into a serving dish.
Serve as a spread for tortilla or banana chips. Store in an airtight container in the refrigerator. Bring to room temperature before serving.

I'm working a 17hr shift starting at 22.00hrs tonight, I've made this (with hemp oil instead of olive) as the perfect protein snack with some crackers for when I get snack-ish!
