“Parmesan” Roasted Chickpeas

Parmesan-Roasted-ChickpeasOnce you pop, you can’t stop. These little crunchy munchies are the perfect snack for travel. Bonus: they’re cheap and easy, too.

What You Need

1 can chickpeas (garbanzo beans), drained and rinsed
2 tablespoon extra-virgin olive oil
1/2 teaspoon kosher salt
1/2 teaspoon dried oregano
1/2 teaspoon garlic powder
1/2 teaspoon crushed red pepper
1 tablespoon vegan Parmesan cheese
How to Make ItPreheat oven to 400 degrees F and line a baking sheet with aluminum foil.

In a large bowl, mix together chickpeas, olive oil, salt, oregano, garlic powder and crushed red pepper. Spread evenly onto baking sheet and bake for 20 minutes. Rotate and stir; continue to bake until evenly roasted and crispy.
Once out of the oven, toss the chickpeas in vegan Parmesan and serve.

    This looks awesome, I’m going to try it. I struggle with wanting something crispy and snacky, but I try not to eat processed foods. Can’t wait to try it!

    These are great! I have made roasted chickpeas in the past, but the parmesan, oregano, and red pepper flakes in this recipe is much more flavorful and interesting.

    I also branched out and made a cinnamon sugar batch, using my cinnamon sugar grinder.

    Two tips: 1. Make a double batch (two cans). Just one can of chickpeas does not yield much for the effort put forth. 2. Bake them much longer than 20 minutes to achieve a better crunch. I baked mine for almost 40 minutes.
